Make a delicious gluten free meal in the air fryer with Gluten Free Air Fryer Cheesy Beef Enchiladas.

Notes
If your air fryer basket is small, it may be necessary to cook the enchiladas in 2 batches. Cook until the cheese is fully melted, as all air fryer cook times vary. Homemade Taco Seasoning (handwritten in the margin, apparently as a substitute for the store-bought packet called for above): 1/2 tbsp chili powder; 1 tsp cumin; 1/4 tsp onion powder; 1/4 tsp garlic powder; 1/8 tsp red pepper flakes; 1/4 tsp oregano; 1/4 tsp salt; 1/4 tsp pepper; Pinch of cayenne. The embedded photo on this page is significantly marred by what looks like an actual physical stain/color bleed on the paper (a rainbow-ish smear over the top-right corner) — not usable as a clean product photo.
