Char Siu Pork Belly (Air Fryer)

Ingredients

  • 500 g pork belly (cut into 3-4 cm strips) (Pork & Marinade)
  • 3 cloves garlic, minced (Pork & Marinade)
  • 2 tbsp soy sauce (Pork & Marinade)
  • 1 tbsp dark caramel (Pork & Marinade)
  • 1 tsp sesame oil (Pork & Marinade)
  • 2 tbsp hoisin sauce (Pork & Marinade)
  • 1 tbsp oyster sauce (Pork & Marinade)
  • 1 tsp five spice powder (Pork & Marinade)
  • 1 tbsp Chinese cooking wine (Shaoxing) (Pork & Marinade)
  • 1 tbsp honey (Pork & Marinade)
  • 1 tbsp sugar (Pork & Marinade)
  • 1/2 tsp MSG (optional) (Pork & Marinade)
  • Red food coloring (optional) (Pork & Marinade)
  • Chinese broccoli (Optional Chinese Broccoli Side)
  • Oyster sauce (Optional Chinese Broccoli Side)
  • Sesame oil (Optional Chinese Broccoli Side)

Steps

  1. Pork & Marinade: Make Marinade. Whisk all marinade ingredients until smooth and glossy.
  2. Pork & Marinade: Prepare Pork. Pat pork belly dry and slice into 3-4 cm strips. Lightly score meat side.
  3. Pork & Marinade: Marinate. Coat pork in marinade. Cover and refrigerate 6-24 hours (overnight best).
  4. Pork & Marinade: Preheat. Preheat air fryer to 180°C / 356°F.
  5. Pork & Marinade: Cook. Remove pork from marinade (save marinade). Cook 12-15 minutes at 180°C, turning halfway.
  6. Pork & Marinade: Glaze. Brush pork with reserved marinade. Increase heat to 200°C / 392°F and cook 5-8 minutes, brushing once more until sticky and caramelized.
  7. Pork & Marinade: Rest & Slice. Rest 5-10 minutes, then slice against the grain.
  8. Optional Chinese Broccoli Side: Boil broccoli 1-2 minutes in salted water.
  9. Optional Chinese Broccoli Side: Drain and drizzle with oyster sauce + sesame oil.
