Ingredients

  • 2 1/2 lbs chicken leg quarter (skinless, bone-in) (Marinate)
  • 1 tbsp ginger garlic paste (Marinate)
  • 1 tsp salt (Marinate)
  • 1 tsp turmeric (Marinate)
  • 2 bay leaves (Whole Spices)
  • 1 star anise (Whole Spices)
  • 2 cloves (Whole Spices)
  • 2-3 cardamom (Whole Spices)
  • 1 tsp peppercorns (Whole Spices)
  • 1 1/2 tsp coriander powder (Spice Mix)
  • 1 tsp cumin powder (Spice Mix)
  • 1 tsp garam masala (Spice Mix)

  • 3 tbsp vegetable oil (Oil/Ghee)
  • 1 tbsp ghee (Oil/Ghee)

Steps

  1. Make slices into the chicken legs. Mix the marinade and marinate the chicken for at least 20 minutes.
  2. Add oil and ghee to a pan and heat.
  3. Fry the chicken in the oil for 4-5 minutes on each side.
  4. Take the chicken out and set aside.
  5. Using the same oil, add the onion to the pan.
  6. Cook for 2 minutes.
  7. Add the whole spices and cook for 2 minutes.
  8. Add the ginger and garlic and cook for 2-3 minutes.
  9. Add the salt, cook for 2-3 minutes.
  10. Add 1/2 cup of water and cook for 3-5 minutes.
  11. Add the bell pepper (optional).
  12. Add the spice mix. Mix, add another 1/2 cup of water, and cook for 5 minutes.
  13. Add the yogurt and cook for 5 minutes.
  14. Add the milk and mix.
  15. Add the chicken and cover the chicken with the sauce.
  16. Reduce heat and cook for 5-6 minutes.
  17. Cover the chicken with sauce again and cook for another 5-6 minutes.
  18. Turn the chicken and add 1/2 cup of water.
  19. Turn the heat to high and cook on high for 5 minutes.
  20. Cook until the chicken is done and the moisture is dried up.
  21. Optional: add 1 tbsp sugar or almond powder.
  22. Serve with a drizzle of cream and garnish with cilantro leaves.
