Garlic Sesame Noodles

Ingredients

  • 2 bundles Korean udon noodles (Wang's brand recommended)
  • 1/4 cup sesame paste
  • 2 tbsp soy sauce
  • 1-inch piece of fresh ginger, grated or minced
  • 6 cloves garlic, grated or minced
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp sriracha
  • 2 tbsp noodle cooking water (reserved)
  • Salt and pepper to taste
  • Scallions (Optional Toppings)
  • Sesame seeds (Optional Toppings)
  • Chili flakes (Optional Toppings)

Steps

  1. Cook noodles according to package directions. Before draining, reserve 2 tbsp of the cooking water.
  2. Make the sauce: combine sesame paste, soy sauce, rice wine vinegar, sesame oil, sugar, and sriracha in a bowl. Mix in the grated ginger and garlic.
  3. Loosen the sauce with the reserved noodle water and stir until smooth and well combined.
  4. Toss the noodles with the sauce until fully coated. Season with salt and pepper to taste.
  5. Top with scallions, sesame seeds, and chili flakes as desired. Serve immediately.
Notes

The secret to elevating these noodles is loading up on lots of garlic for a serious flavor boost!
