Homemade Craft Cola (For Breville InFizz)

Ingredients
- 2 cups Brown sugar (or Demerara sugar) (For the Cola Syrup)
- 1 cup Filtered water (For the Cola Syrup)
- 2 Cinnamon sticks (For the Cola Syrup)
- 1 Orange (peel only, white pith removed) (For the Cola Syrup)
- 1 Lemon (peel only, white pith removed) (For the Cola Syrup)
- 1 Lime (peel only, white pith removed) (For the Cola Syrup)
- 1/2 tsp Coriander seeds (For the Cola Syrup)
- 1/2 tsp Ground nutmeg (For the Cola Syrup)
- 1 tsp Pure vanilla extract (For the Cola Syrup)
- 1 tbsp Fresh lemon juice (For the Cola Syrup)
- 1 tbsp Fresh lime juice (For the Cola Syrup)
- Chilled water (For the Drink Assembly)
- Ice cubes (For the Drink Assembly)
Steps
- Make the Syrup: Melt Sugar: Add the brown sugar to a small saucepan over low-medium heat. Stir continuously for 3 to 5 minutes until it begins to liquify and darken slightly.
- Add Liquid: Very carefully pour in the 1 cup of water. It will bubble rapidly. Stir constantly until the sugar completely dissolves into a smooth liquid.
- Infuse Aromatics: Add the cinnamon sticks, citrus peels, coriander seeds, and nutmeg to the pan. Bring to a gentle simmer for 8 to 10 minutes until the mixture slightly thickens into a syrup.
- Cool & Strain: Remove the pan from the heat. Stir in the vanilla extract, lemon juice, and lime juice. Let the syrup cool completely at room temperature for roughly 30 minutes, then strain it through a fine-mesh sieve into a clean glass jar.
- Fizz and Assemble: Combine: In your Breville InFizz bottle, mix 1 part cola syrup with 3 to 4 parts cold water (adjust to your taste preferences). Ensure the total liquid hits the designated bottle fill line.
- Carbonate: Secure the FusionCap onto the bottle. Insert it into your InFizz machine and press the carbonating lever using short, 1-second bursts. Press 2 times for light fizz, or up to 6 times for maximum cola carbonation.
- Release & Serve: Gradually slide the FusionCap switch to the right to safely vent the built-up gas. Pour your fresh cola over a glass filled with ice and enjoy!
