Homemade Sweet Chili Sauce

Ingredients

  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 1 cup sugar
  • 1 tbsp garlic, minced
  • 1 tbsp light soy sauce (use coconut aminos for GF)
  • 4 tsp red pepper flakes or red chili flakes
  • 3 tsp cornstarch
  • 2 tbsp water (for slurry)

Steps

  1. Combine rice vinegar, 1/2 cup water, sugar, garlic, soy sauce, and red pepper flakes in a small saucepan over medium heat. Stir until sugar is dissolved and bring to a gentle simmer.
  2. In a small bowl, whisk together the cornstarch and 2 tbsp water to make a slurry.
  3. Pour the cornstarch slurry into the simmering sauce while stirring. Cook for 1-2 minutes until sauce thickens.
  4. Remove from heat and let cool. Transfer to a jar and refrigerate. Keeps for several weeks.
  5. Great for dipping spring rolls, dumplings, chicken strips, or using as a glaze.
