Lamb/Mutton/Goat Korma

Ingredients

  • 3 lbs Mutton or Lamb Meat
  • 4 tbsp Vegetable Oil
  • 1 tbsp Whole Cumin Seeds
  • 8-10 Cardamom
  • 2 Cinnamon sticks
  • 4 Bay leaves
  • 4 tbsp Ginger & Garlic Paste
  • 2 Medium Sliced Onion
  • 5-6 Medium Tomato halved or 1 cup tomato puree
  • 1 tbsp Salt (Spices)
  • 2 tbsp Coriander Powder (Spices)
  • 1.5 tbsp Cumin Powder (Spices)
  • 1 tsp Garam Masala Powder (Spices)
  • 4 tbsp Yogurt (Spices)
  • 2 tbsp Ground Almond Powder (Spices)
  • 3 tbsp Dried Milk Powder (Spices)
  • Coriander to garnish (Spices)

Steps

  1. Prep all ingredients.
  2. Add oil to pan and heat.
  3. Add cumin seeds, cinnamon sticks, bay leaves and cardamoms.
  4. Add ginger garlic paste. Turn heat to low and mix.
  5. Cook for a minute.
  6. Add onions, add salt. Cook for a few minutes to soften (about 10 mins).
  7. Add tomatoes (skip next step if using puree).
  8. Add 1/2 cup of water. Cover and cook for 10 mins on medium high heat.
  9. Add meat.
  10. Add water (3 cups). Can use a pressure cooker if you have one here.
  11. Cook for 45 mins to an hour till meat is tender. Check every 10 mins and mix.
  12. Add spices.
  13. Cook till liquid is dried down.
  14. Stir yogurt and add.
  15. Add water (2 cups).
  16. Let cook for 20 mins.
  17. Add almond powder.
  18. Add milk powder.
  19. Turn to low heat, mix till powders are dissolved.
  20. Simmer for 5-10 mins till it thickens.
  21. Garnish with coriander.
