Pickled Red Onions

Ingredients

  • 1 large red onion, thinly sliced
  • 1/2 cup white vinegar (or apple cider vinegar)
  • 1 cup hot water
  • 1 tbsp sugar
  • 1 1/2 tsp salt

Steps

  1. Peel and thinly slice the red onion into rings or half-moons.
  2. In a bowl or jar, mix the vinegar, hot water, sugar, and salt until the sugar and salt are fully dissolved.
  3. Place the sliced onions into a clean jar.
  4. Pour the hot brine over the onions, making sure they are fully submerged.
  5. Let cool to room temperature, then cover and refrigerate. Ready to eat after 30 minutes, best after a few hours.
  6. Keeps in the fridge for up to 2 weeks. Great on avocado toast, tacos, salads, sandwiches, or grilled meats.
