Sesame-Hoisin Meatballs

Ingredients

  • 1 packet pork mince
  • 1 knob ginger, peeled and finely grated (2 tsp)
  • 2 cloves garlic, finely grated
  • 3 tbsp soy sauce
  • 1 sachet sesame seeds (1 tbsp)
  • 1 sachet hoisin sauce (50g)
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil (optional)
  • 1 bunch baby bok choy, roughly chopped
  • 1 bunch Asian greens, roughly chopped
  • 1 bunch broccolini, cut in half crossways
  • 1 long red chilli, finely sliced (optional)
  • 2 packets Jasmine rice (1 1/2 cups)
  • 6 cups water
  • 1 packet roasted cashews (1/4 cup)
  • Olive oil, salt and pepper

Steps

  1. Peel and finely grate ginger (2 tsp). Finely grate garlic. Roughly chop baby bok choy and Asian greens. Cut broccolini in half crossways. Finely slice chilli (optional).
  2. In a medium bowl, combine pork mince, half the soy sauce, ginger, and half the garlic. Roll into ~20 meatballs.
  3. Rinse Jasmine rice well. Place rice and water in a medium saucepan and bring to the boil. Reduce heat and simmer uncovered for 11-12 minutes until soft. Drain and cover to keep warm.
  4. While rice cooks, heat a large frying pan over medium-high. Toast sesame seeds 2-3 minutes until golden. Remove and set aside. Add olive oil and cook meatballs 8-9 minutes until cooked through. Reduce heat to medium-low. Add hoisin sauce, rice wine vinegar, 2 tbsp warm water, and sesame oil. Simmer 2 minutes. Return sesame seeds and stir to coat.
  5. Heat olive oil in a medium frying pan over medium heat. Add remaining garlic and cook 1 minute. Add remaining soy sauce, baby bok choy, Asian greens, and broccolini. Cook 4 minutes until softened.
  6. Divide rice between plates and top with sesame-hoisin meatballs and greens. Sprinkle over roasted cashews and chilli (if using).

Served with Jasmine Rice & Broccolini.
