Southwest Chicken Pasta

Ingredients

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb chicken breasts
  • 2 tbsp unsalted butter
  • 3/4 cup yellow onion, diced
  • 2 tsp minced garlic
  • 1 1/2 cups chicken broth
  • 14.5 oz petite diced tomatoes
  • 15.25 oz yellow corn, drained
  • 15.25 oz black beans, drained and rinsed
  • 1 oz taco seasoning
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 tbsp fresh parsley

Steps

  1. Cook penne according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook 5-6 minutes per side until cooked through. Remove and slice.
  3. In the same pan, melt butter over medium heat. Add onion and cook until softened. Add garlic and cook 1 minute.
  4. Pour in chicken broth and diced tomatoes. Add corn, black beans, taco seasoning, and black pepper. Stir to combine.
  5. Stir in heavy cream and bring to a simmer. Add cooked pasta, sliced chicken, and parmesan. Toss to combine.
  6. Garnish with fresh parsley and serve.
