Sprite Syrup

Ingredients

  • Zest of 3-4 lemons
  • Zest of 6-8 limes
  • 1 cup granulated sugar
  • 1 cup boiling water
  • Sparkling water (like Topo Chico or Perrier)
  • Fresh lime juice

Steps

  1. Rub the Zest: Add the sugar and the freshly grated zest of your lemons and limes into a bowl. Massage the mixture with your hands until the sugar looks like wet, fragrant sand.
  2. Dissolve: Pour the boiling water over the mixture and whisk until the sugar is completely dissolved.
  3. Steep & Strain: Let the mixture steep for 15-30 minutes, then strain it through a fine-mesh sieve to remove the zest. Let the remaining syrup cool down.
  4. Serve: Add 2 to 3 tablespoons (or up to 1/4 cup, depending on taste) of your syrup to a glass filled with ice. Squeeze in the juice of half a lime, and top off the glass with cold sparkling water. Stir well.
Notes

Making your own soda syrup is a great way to control the sweetness and avoid preservatives.

Store the cooled syrup in an airtight mason jar in your refrigerator. It will stay fresh for about 2 to 4 weeks.
